Inside - Out Ravioli
Ground Beef: 5 lbs.
Medium Onion – chopped: 3
Garlic – chopped: 3 cloves
Frozen Spinach – chopped: 2 – 2 lb. bags
Lasco Spaghetti Sauce: 1-gallon container
Macaroni: 3 lbs.
Bread Crumbs: 2 cups
Eggs – beaten: 4
Mozzarella – shredded: 4 cups
In a large skillet, brown the ground beef, onion, and garlic, drain fat. Cook spinach as directed on package, reserving 1 cup liquid. In a large skillet, combine the ground beef mixture, reserved spinach liquid and Lasco Spaghetti Sauce. Simmer for 10 minutes. Cook macaroni as directed on the package. In a large bowl, combine the cooked spinach, cooked macaroni, bread crumbs, eggs, and mozzarella cheese. Apply Vegalene (or your favorite non-stick coating), or grease, to two full size steam table pans. Into the two pans, spoon equal amounts of the macaroni mixture (as the bottom layer) and the meat sauce mixture (as the top layer).
Cover and bake for 20 minutes at 325º F. Remove cover and bake for an additional 5 minutes.
